Breakfast Bars

This amazing recipe will give you a jump-start on your day with clean energy and lots of nourishment for body and mind. Choosing whole foods and super foods over sugary cereals, drinks, or ‘going without’ is a great way to make every day a good day! Research has shown that the right breakfast can make drastic positive changes in how we feel and perform all day – and it’s essentially to have a great first meal when you’re trying to lose weight.

 

Enjoy this simple breakfast bar recipe and give your body everything it needs to succeed!

 

Makes 9 bars, in an 8×8 inch square tin

1 cup of raw almonds
½ cup of shredded coconut
½ cup of pumpkin seeds
½ cup of oats

¼ cup of hemp seeds
¼ cup of chia seeds

¼ cup of coconut butter (Like Nutiva brand “Coconut Manna” available at Mothers Market)
4 tablespoons of coconut oil
¼ cup of raw honey or use coconut nectar to be low glycemic (AVOID agave)
8-10 Medjool dates (enough to make it stick together)
1 teaspoon of sea salt
(I also like to add superfood powders like “Earth” by HealthForce or whatever you have on hand)

Directions:

  • In a food processor, chop the almonds briefly so they are slightly ground and crumbly but not oily.
  • Add the remaining ingredients and process until you get a dough-like consistency. If the mixture is not sticking together well, add more dates.
  • Press firmly into an 8×8 inch tin, refrigerate to set and cut into bars before serving.

Note: You can mix and match a lot of these ingredients. If you don’t have everything on the list it won’t make much difference. If you have other favorites, like dried berries or different nuts, feel free to substitute and make the bars the way you would like them! The main idea is just to get some healthy protein and macronutrients that will give your body fuel for the day!

These bars will store well in the fridge or freezer so make a big batch and keep them on hand when you need replenishment! Enjoy!
